In Washington, DC, a Mexican-Salvadoran joint where the big seller is a Salvadoran papusa - scratch made dough stuffed with shredded pork and cheese. And in Philadelphia, a local favorite serving a vegan club sandwich with deep fried tofu and smoked coconut.
