This trip, Guy Fieri is rolling out for comfort food done right. In Indianapolis, a dog-friendly neighborhood joint doing their Barking Lard BLT with homemade bacon. In New Orleans, a place from the 1890s where they're still reinventing classics like jambalaya and green bean casserole. And in Winters, California, a little spot off the beaten path doing wood fired pizza.

Don't bother contacting the Old Coffee Pot for the green bean casserole recipe. They won't give it out. OK - but tell me on my first phone call, don't give me the runaround telling to call back. Four phone calls later I was told it's a family recipe!

Here's the recipie.

butter
onion
green bell pepper
artichoke -bottoms?
cremini mush. chopped
garlic chopped
cremini mush.-sliced
green beans
dry sherry
cream
parmesan cheese
slurry
S & P
parmesan
bread crumbs
bake 400 deg. 7 maybe 17 min.?


Ok, so this is what I've got after watching the video.

1. Add butter to pan. Sauté and add onions, bell pepper, and artichoke hearts without the leaves.

2. Once that sautés up a bit, add chopped cremini mushrooms and a lot of chopped garlic.

3. Add sliced cremini mushrooms and green beans with stems/ends on.

4. Once that sautés off a little bit, add sherry and heavy whipping cream with at least 36% fat.

5. Let this simmer and right before it boils add the parmesan. Add cornstarch slurry (cornstarch dissolved in water). Add salt and pepper.

6. Pour into pan. Top with parmesan and bread crumbs. Bake at 400 degrees for about 7 minutes so that it is brown and crispy on top.

7. Plate and top with parsley.

I ate at the old coffee pot recently (after seeing the episode) and the casserole was even better than I could have imagined :)
